We are not very original when it comes to breakfast. We usually have eggs, avocado, and an English muffin after our workouts. How we do the eggs is where we get our variety 🙂 One of our favorite breakfasts is over-easy eggs (or once over lightly or sunnyside up), avocado, and an English muffin.
Ingredients
- two or four eggs (depending on your hunger level)
- 6 tablespoons egg whites (although my husband usually just “free pours”)
- salt and pepper
- 1/2 avocado
- 1/2 English muffin
- 1 tbsp avocado butter
- 1 tbsp peanut or almond butter if you so choose
Stacy’s Suggestions and Preparation
- Get our your eggs and egg whites. We like Cage Free Organic eggs. I usually eat two and my husband has three
- Spray pan with olive oil spray
- Crack eggs carefully so you do not break the yolk
- Add egg whites
- Sprinkle on salt and pepper as desired.
- Flip over carefully and remove from heat or Put a lid on your pan on low heat
- Slide onto the plate when the egg yolk meets your desired dippy level
- Rinse and cut avocado and slice it onto the side of your plate
- Toast English muffin (or other bread if you choose) We like Ezekiel muffins.
- Butter your bread and Enjoy!
